Sal and I went apple picking in September, as we do every year, even though I know he'd rather be sitting on the couch watching football. He turned off his phone for the entire day, recorded the football game, and explored the fields of apples and pumpkins with me. To say I was excited was an understatement. We asked a friend for advice on where to go in our new town, and found an awesome little farm with apple trees, and a sweet little shop of veggies, fruits, homemade ice cream, breads, and apple cider doughnuts! We filled a bag full of apples from the trees, after enjoying a short ride on the tractor. We had so many apples, I wasn't even sure what to do with them! We eat an apple a day, but I was afraid they'd go bad before we got to eat them all (and I'm sad to say a few did end up in the garbage).
That's when I saw the mason jars I had just bought, and knew I needed to add overnight oats back into my life. I basically threw an apple pie in the jar, just without all the sugar, and with plenty of nutritional benefits! From the apple and oats to the chia seeds and almond milk.
